Gundel’s pancakes

Perhaps you thought that they were not that important because they are so small. I see them completely differently. I think that even small things can be very valuable, perhaps even indispensable! For example, here I am, a small Zsolnay porcelain dessert plate. I'm not complaining, my special function has been appreciated for decades in one of the most iconic locations in Budapest, the Gundel Restaurant. On countless occasions I have played my part in serving Gundel’s renowned pancakes. I know it's silly to shout about being the first, but it was I who served the very first portion of this thin, folded pancake stuffed with walnuts and smothered in chocolate sauce. And since I was actually there, I can confirm from a reliable source that it was not Károly Gundel who invented Gundel’s pancakes, but Ilona Matzner, the wife of the famous writer Sándor Márai. It is somehow typical that the dish came to be named Márai Pancakes, after her husband. Then came World War II and the regime that followed it no longer like Márai. So much so that even the pancakes were renamed, becoming Gundel’s Pancakes. But what’s in a name? I have watched the faces of diners for decades, and can tell you without fear of contradiction, that they are one of the best desserts in the world. If you don't believe me, just try one!
