Liptovské droby
We have different brothers in the world, but we are unique. We are sausages with potato filling and we have also received a protected geographical indication. Our quality is thus guaranteed by our origin. Potatoes were beggining to cultivate in Liptov in the middle of the 18th century. The catastrophic crop failure in 1771 contributed significantly to this. Potatoes gradually became one of the main components of the population's diet and were labeled "second bread". Liptov has always been an important potato-growing area and at the same time it was self-sufficient in the cultivation of farm food. The use of slaughter by-products was very important from an economic point of view. Liptovské droby is one of these delicacies. The vast majority of the filling consists of finely grated potatoes seasoned with spices. Ground greaves and onion are added to these. In order for the dough to stick together nicely, semolina flour is used. The mixture is finely ground and stuffed into pig or beef intestines. The droby are cooked and then cooled. Before we are served, they roast us in pork grease. We taste the best with sauerkraut.
